Job Summary
Do you enjoy using your culinary skills in fast paced growing environment? Chartwells Higher Ed is currently seeking a Chef Manager at Texas A&M University to operate Duncan Dining Commons. In this role, you will be responsible for successfully supporting the culinary operations for cadet dining M-F. You will assist in the supervision, preparation, and cooking of various food items, as well as developing daily menu items and their preparation and garnishment. Additionally, you will supervise hourly associates and collaborate with the Executive Chef/Chefs to develop new menus and assist with ordering.

Key Responsibilities:
Full culinary management of food service operation to include inventory, ordering and receiving
Knowledge of P&L accountability and contract-managed service experience
Lead $12 milion dining hall with managing cost controls and control expenditures for the account
Proficient in menu development, cost controls, purchasing and inventory with a focus on sourcing and utilizing local food products
Foster strong client relationships to align our programs with their objectives, driving satisfaction and retention
Possesses a passion for sustainability
Preferred Qualifications:
Must have a working knowledge of HACCP
Three years of culinary management experience in contract foodservice with inventory and purchasing knowledge and control
Extensive knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls, and presentation
High volume, complex foodservice operations experience - highly desirable
Institutional and batch cooking experiences helpful
Comprehensive knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls, and presentation
Must be experienced with computers
Experience with exposition cooking needed
Knowledge of P&L accountability and contract-managed service experience
ServSafe certified is a plus
