POSITION SUMMARY
Manage the day to day Food Safety and hygiene standards of the kitchen and outlets in accordance with the Director of Hygiene. To ensure full compliance of local legislative and Marriott Food Safety & Hygiene and food safety requirements are fulfilled in the hotel. Work closely with the Culinary Team, all outlet managers, Director of Hygiene to develop and successfully implement policies, follow up accordingly and monitor on daily bases on the hygiene and food safety practices and policies.
Managing Hygiene and Food Safety Operations
Responsible for the over-all implementation of food safety & quality policies of the hotel
Advise and monitor food handlers on the proper good handling practices and verify their observance.
Identify key areas of risk in various food operations and take pre-emptive remedial action.
Conducts regular inspections of all food handling areas, bars, pantries, rooms amenities, staff locker rooms, behaviour of staff which may be a potential food safety issue, assures compliance with food safety standards and report any non-confirmative to director of hygiene
Conduct and record daily kitchen inspections on the personal, environmental and food hygiene conditions and provide corrective action plans as necessary.
Conduct regular inspections on the kitchen of kitchen equipment and verify defects and non-conformities are remedied by the appropriate parties.
Coordinate cleaning program in all F&B areas (e.g., General clean), identify trends and make recommendation for improvements.
Maintain and make improvements to hygiene standards.
Regularly review and refresh the food safety standards of all food handlers within the property.
Conducts regular inspections of all critical food preparation areas and monitors implementation of established HACCP procedures
Monitors the engineering Preventive Maintenance program of all HACCP related equipment used in storage/ preparation/ storage of food and beverage as well as cleaning / dishwashing equipment
Maintains documentation on all hygiene and food safety standards throughout the operation.
Attend all health and safety meetings
Ensure certification for basic food handling training is in accordance to the municipality requirements and certification for the training is approved by municipality.
Ensure that weekly food sampling program for food, beverages, ice cubes, surface swabs is on track.

Sanitation and Maintenance
- Follow and ensure compliance with sanitation and cleaning procedures and pest control guidelines, reporting pest control issues to appropriate personnel.
Safety and Security
Report work related accidents, or other injuries immediately upon occurrence to manager/supervisor.
Identify and correct unsafe work procedures or conditions and/or report them to management and security/safety personnel.
Follow company and department safety and security policies and procedures to ensure a clean, safe, and secure environment.
Follow policies and procedures for the safe operation and storage of tools, equipment, and machines.

PREFERRED QUALIFICATIONS
High School Diploma or equivalent required.
Hotel experience, Minimum of 2 years in similar role
